The knot is a compact intersection of interlaced material... a fastening made by tying together lengths, such as rope, in a prescribed way... a unifying bond.
KNOT is a collection of carefully sourced and handcrafted wines, made only in exceptional vintages to strict standards, blended to perfection.
Sinnet is our masterful and elegant rosé, 100% from the excellent 2007 vintage. It is beautifully colored from the perfectly ripe pinot noir grapes, and aromatically it soars from the glass with fresh red fruits and subtle spices. Powerful but feminine, it shows laser bright fruits on the palate with an emphasis on red plums, tart raspberry and sweet strawberry, with the perfect backing of nutmeg, allspice and crème brulee. It is wonderfully long, refined, seamless and beautifully balanced. This will age gracefully for another 5+ years with ease!
Our newest Cabernet, hailing from the soon-to-be-legendary 2012 vintage, is called Threefoil, after the beautiful and endlessly complex chiral knot often employed by MC Escher. This wine was sourced from one of Napa Valley's most famous wineries, and is a blend of 75% Cabernet, 20% Merlot and 5% Cabernet Franc. True to the vintage, the wine is lush but balanced, with sweet, fragrant wood and blue fruits and a round, luscious texture. Considering its source and pedigree, we believe it to be a monumental value. Will age gracefully for a decade, if you choose!
The strictest grape selection. Four years en triage. Specially customized dosage. Pinot Noir and Chardonnay. Bottled Fall 2012. With full-bodied Champagnes such as Krug serving to guide us stylistically, Halyard is rich and powerful, with a creamy, round feel on the palate and layered complexity. Delicate aromas and flavors of gingerbread, candied ginger, toasted bread, baked apple and pears are all present with a long toasty finish with a touch of toffee, candied fruit and hazelnuts. Complex, balanced and deeply satisfying.
